Most sizing mistakes in this category come from the same error: sizing to daily volume instead of peak demand. Here is how to do it correctly.
Should you size a water system by daily volume or peak demand?
Size by peak hour, not by daily total. A restaurant serving 35 liters of water across a full day only needs about an hour of run time from even the smallest commercial system, so daily volume tells you almost nothing. What matters is how much the system delivers during your busiest hour and how fast it recovers afterward. A unit that keeps up at 6pm handles the rest of the day easily.
This is why two restaurants with identical annual volume can need different systems. A 200-seat room doing one slow turn draws differently than a 90-seat room doing three fast ones.
What size sparkling water system do I need for my restaurant?
Under 75 seats at two to three turns, a system producing 37 to 50 liters per hour is sufficient: the CR-1MS, CR-1, or their remote equivalents. At 100 seats or more, or with high turn or heavy short-term peaks, step up to 68 to 80 liters per hour with the CR-2 or CR-UCM2. Coffee shops, cafes, wineries, and offices serving by the glass are usually served by the CP2000 series.

All production figures are hourly while holding water under 40°F. Chilled still only configurations run slightly lower than sparkling and still combined.
What size system does a 150-seat restaurant need?
A 150-seat restaurant falls in the 68 to 80 liter per hour tier: a CR-2 countertop or a CR-UCM2 remote chiller. At that seat count the deciding factor is usually peak, not total capacity. If you turn the room twice on a Saturday with a compressed dinner rush, the faster recovery of the CR-2 tier is what keeps the tap from falling behind during the two hours that matter.
Between 75 and 100 seats, either tier can be correct. The answer depends on turn speed and whether water is poured by default or sold as an upsell. If you pour to every table on arrival, size up.
How many valves and which dispensing style?
Two-valve towers and countertop models suit full service, bottle service, and craft beverage applications where staff pour for the guest. Three-valve towers and push-button models suit self-service, where guests operate the tap and the third valve adds ambient still water. Pull handles read as craft and are standard front of house. Push buttons are faster and more durable for self-serve.

How far can the chiller be from the tap?
Up to 75 feet with the right chiller. Standard remote chillers run 35 to 45 feet of trunk line. The CR-UCM-MS is limited to 10 feet and the CP2000 recirculating series to 6 feet. For runs past 45 feet, vertical rises over 15 feet, or otherwise difficult routing, the CR-UCM2-2CL-S0096 with its high-capacity external pump handles up to 75 feet.

A single remote chiller can feed two towers, which is often the cheaper answer for a room with a service bar and a separate expo station. Locating the chiller remotely also moves noise and heat out of the guest area, which is why most bars specify remote even when counter space is not the constraint.
When does a cold plate make more sense than a refrigerated system?
When there is no room for a refrigerated chiller. The CR-CPS series uses an ice-cooled cold plate with 40 pounds of ice storage instead of a compressor, which fits spaces that cannot accommodate a chiller and its ventilation. The tradeoff is manual filling: melt-off depends on usage and heavy use can require refilling every 30 minutes. Cold plate systems are self-service only.
Choose a cold plate for tight footprints and moderate demand. Choose a refrigerated system anywhere an ice refill would land on staff mid-service.
What else does a complete system need?
Every install requires a filtration system and an install kit, and both are conditions of warranty coverage.
